Mostaccioli

This is a great weeknight meal.
It is easy and quick to put together and my family loves it!
I made this tasty dish for my pre-race (25 k) carbo load meal.


Mostaccioli

- 12 oz. mostaccioli or penne pasta ( I like to use Plus by Barilla)
- 1 1/2 pound of ground beef (ground turkey would be good too)
- 1 c. finely chopped onions
- 1 (28 oz.) can of crushed tomatoes
- 2 tsp. dried basil
- 2 cloves garlic, minced
-2 tsp. salt
- 1 tsp. pepper
-1 cup sliced black olives
- 1/2 cup of parmesan cheese
- 2 cups of shredded Mozzarella cheese

How to make:
1. Cook pasta for 11-12 minutes, drain.
2. Brown meat and onion. Add garlic; cook 3 minutes. Stir in tomatoes, olives, and seasonings. Simmer on low for 15 minutes.
3. Stir in parmesan cheese. Combine sauce and pasta in 9-by-13 inch baking dish. Top with mozzarella cheese.
4. Bake at 350 degrees for 30 minutes. (first 15 min. cover, last 15 min. uncover)
