Turkey Sausage-Stuffed Manicotti

This Stuffed Pasta dish will not disappoint!
The sweet turkey sausage adds a lot to the dish. Jennie-O makes the sausage, you can find it by the ground Turkey in your grocery store's meat department.
This dish does require some time, but it is well worth the effort!
Serve with a green salad and garlic bread, and you have a very good meal!



Turkey Sausage - Stuffed Manicotti

Ingredients:
- 10 uncooked manicotti
-cooking Spray
- 1 or 1 1/2 pounds of sweet turkey Italian sausage
- 1 1/2 cups of finely chopped onion
- 1 cup of finely chopped green pepper
- 2 Tablespoons butter
- 2 Tablespoons all-purpose flour
- 2 cups of fat-free milk
- 1/8 teaspoon black pepper
- 1 1/2 cups shredded part-skim mozzarella cheese
- 2 cups tomato-basil pasta sauce
- 1/4 cup of grated Parmesan cheese

How to Make:
1. Cook pasta according to package directions.

2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Remove casings from sausage(the outside of the sausage that holds it together). Add sausage to pan; cook 5 minutes or until browned, stirring to crumble. Add onion and bell pepper to pan; saute 5 minutes or until tender.

3. Melt butter in a medium saucepan over medium heat. Stir in flour; cook 2 minutes, stirring constantly with a whisk. Remove from heat and gradually add milk, stirring with a whisk. Return pan to heat and bring to a boil. Cook 6 minutes or until becomes very thick. Add black pepper. Mix the thickened milk mixture into the meat mixture.

4. Preheat oven to 350 degrees.

5. Spoon about 1/3 cup sausage mixture into each cooked Manicotti. Arrange Manicotti in a single layer in a 13 x 9 inch baking dish coated with cooking spray. Sprinkle Mozzarella cheese over Manicotti. Top with pasta sauce, spreading to cover. then Sprinkle with Parmesan cheese.

6. bake at 350 degrees for 35 minutes or until bubbly.
